The best bounty cookies



Now I am a biscuit lover, but sometimes I crave the soft chewy texture of a cookie, rather than the snap of a biscuit. I am also a massive fan of Bounty bars, combine the two and tada the

Bounty Cookie was born and boy is it a thing of beauty!
In fact I am eating one at this very moment I'm typing this up, its a delicious experience, that I can tell will be repeated many times over.

So without further fannying about, here is how you make Bounty Cookies.


You will need........

2 lined baking sheets
125g butter/marg
160g soft brown sugar
60g caster sugar
1 egg
1tsp vanilla extract
150g self-raising flour
120g plain flour
1tsp baking powder
3 bounty's roughly chopped ( I bought a 4 pk in Tesco for £1 )

What to do.......

  1. Preheat the oven to 160c/gas3 and line your baking sheets.
  2. Melt the butter in the microwave and allow to cool slightly.(bout 30seconds should do it)
  3. Pour butter into a large bowl and stir in both sugars until dissolved.
  4. Lightly beat the egg, before adding to the sugar mixture along with the vanilla extract.
  5. Sift both flours and baking powder in a bowl, then gradually mix it into the rest of the mixture, stirring thoroughly.
  6. Stir through bounty chunks.
  7. Divide the dough into 16/20 cookies over the 2 trays, being sure to leave space for the cookies to spread slightly.
  8. Bake for 12 minutes or until very lightly coloured, they should still look fairly soft.
  9. Allow to cool on the trays for 3/4 minutes before transferring to a wire rack to finish cooling, the cookies will firm up as they cool, so be careful when moving them.
