Vegan carrot cake with lemon buttercream recipe


Vegan baking is somewhat of new territory to me, but any self respecting cake eater, whether she finds herself going dairy free or not, needs cake. I have tried a few vegan cakes while being out about, and decided I needed to find a recipe I could bake myself. 

That's when I decided to research a carrot cake recipe, and came up with this recipe for vegan carrot cake with lemon buttercream.

Vegan carrot cake with lemon buttercream recipe

This is a super simple, all in one recipe, that even a pretty novice baker, should be able to manage.

Ingredients

  • 2 cups (250g) plain flour
  • 1tsp Baking powder
  • 1tsp Baking soda
  • 1/2tsp Salt
  • 2tsp Cinnamon
  • 1tsp Nutmeg
  • 250g Grated carrot (approx 3)
  • 1 and 1/2 cup brown sugar (300g)
  • 2 flax eggs
  • 1tsp Vanilla extract
  • 1tbsp Apple cider vinegar
Buttercream
  • 3 and 1/2 cups icing sugar (450g)
  • 3tbsp vegan butter
  • 1tsp Vanilla extract
  • 2tsp Apple cider vinegar
  • 3 to 4 tbsp fresh lemon juice (1 lemon)

Directions

  • Preheat the oven to 180 celsius or 350 degrees, line 2 round 7 Inch cake tins with parchment paper.
  • Sift the flour, baking powder, baking soda, salt, cinnamon and nutmeg into a mixing bowl.
  • Add the grated carrot and brown sugar and mix.
  • Prepare the flax eggs, by mixing 2tbsp flaxseed with 6 tbsp water and allow it to rest for a minute or so.
  • While waiting for the flax egg to stand, add the oil, vanilla, and the apple vinegar to the bowl.
  • Then add the flax and mix everything together till well combined, if the mixture is a little dry add a drop of dairy free milk.
  • Tip into the cake tins and pop in the oven, bake for approximately 30 minutes, until a cocktail stick comes out clean when pricked.
  • Put on a cooling rack and allow to cool completely.
  • Once cool, make the buttercream by combining all the ingredients and mixing with an electric mixer.
  • Cover one of the cakes with buttercream, top with the other cake and cover with the remaining cream.

 Enjoy with your favourite cuppa.
