Lifestyle - Baking Vanilla cupcakes with Pink icing



Hey lovelies, 
Firstly I wanna apologise for my Piss poor excuse for icing it really is not my forte, but hey ho the cupcakes tasted lush even if they weren't quite as pretty as they where in my head, beauty comes from within and all that jazz!!

Anyway these cupcakes are super easy to make you will need;

Ingredients cakes
  • 175g butter at room temp 
  • 175g self raising flour
  • 175g caster sugar
  • 1 tsp baking powder 
  • 1/2 tsp vanilla extract
  • 3 eggs

icing
  • 175g butter at room temp
  • 350g icing sugar
  • 1/4 teaspoon vanilla extract
  • milk for loosening
  • edible food colouring
Method
Cream butter and sugar until smooth add in the rest of the cake ingredients until combined, spoon into cake cases and put in a 180C oven for about 20 mins or until cooked.
Once baked remove and allow to cool completely, in the mean time make the icing by combining the butter and half the icing sugar then gradually add in the rest of the sugar, vanilla and colouring adding milk to loosen if needed (this is where I went wrong I think adding to much) pipe onto cakes in a decorative fashion, adding sprinkles to make it look pretty.


You will undoubtedly make a better job of icing them the me, but gives me a reason to practice haha.
