Hey lovelies,
I'm back with another baking recipe, this time for coffee and walnut butterfly cakes, If you like coffee you are gonna like these and if you don't like nuts just remove them from the recipe and have plain coffee cakes instead. It's a dead simple recipe following the all in one method, so super quick and easy and takes minimal skill levels, hence why I have made them.....
Ingredients cakes;
- 2tsp instant coffee dissolved in a splash of hot water and allowed to cool.
- 115g butter at room temp.
- 115g caster sugar
- 115g SF Flour.
- 1tsp baking powder.
- 2 large eggs.
- 45g chopped walnut halves.
Ingredients icing;
- 2tsp instant coffee dissolved in a splash of hot water and allowed to cool.
- 350g icing sugar.
- 175g butter at room temp.
- 6 walnut halves, halved.
Method;
- Pre heat oven to 180c/160cfan/gas4.
- Line bun tin with cute cases of choice.
- Dissolve coffee granules.
- Put butter,sugar,flour,baking powder,eggs and coffee in mixer and mix till combined.
- Fold in walnut pieces.
- Spoon into cases and bake for 15 to 20 mins or until cooked.
- Remove from oven and allow to cool on wire rack.
- Dissolve more coffee for icing and when cool mix with butter and icing sugar in mixer until all combined and smooth.
- Cut out a circle from the top of each cake and cut in half to make wings.
- Pipe the icing in the hole and arrange wings and a piece of walnut half on top.
- Optional dust icing sugar on top, I didn't bother as thought they looked pretty without.
- DEVOUR!
