Hey lovelies,
For today's blogmas post I have gone baking mad, and made these truly delicious Cranberry and White Chocolate cookies, that are not only scrumptious but easy to make and can even be baked ahead then frozen, safely tucked away until you need them.
I have adapted this recipe from Nigella, replacing her pecans for hazelnuts cause that's what I prefer, I love Nigella and would highly recommend her Christmas cook book.
Ingredients;
- 150g plain flour
- 1/2 ts baking powder
- 1/2 ts salt
- 75g rolled oats
- 125g soft butter
- 100g caster sugar
- 1 egg
- 1 ts vanilla extract
- 100g white chocolate chips
Method
- Preheat oven to 180c or gas mark 4 and line your baking sheets.
- Measure the flour, baking powder, salt and oats into a bowl.
- Put the butter and sugars in another bowl or mixer and mix till creamy, then beat in the egg and vanilla
- Beat the dried ingredients into the butter mixture, then fold in your chopped nuts, cranberries and chocolate chips.
- Roll the dough into balls in your hand putting on the baking sheet then pressing down with a fork, depending on the size, how many you make and how many baking sheets you have you may have to bake in batches.
- Cook for 10 - 15 minutes, when ready the cookies will be pale and golden but don't move them immediately, they'll be to soft put the trays on a cool surface and let the cookies harden for 5 minutes, before transferring to a wire rack to cool fully.
I made 18 cookies as mine where pretty big but you could easily make a lot more if you made them a more sensible size haha, I think these are super festive the cranberries make them seem proper Christmassy and would be great with a cuppa when friends and family visit.
