Hey lovelies,

Recently I have been loving Nadiya Hussian's (Bake off Winner) cooking show Nadiya's British food adventure, I just think she is so lovely and her recipes look amazing, so much so I snapped up the book that goes alongside the TV show. I am defo planning to try lots of meal ideas from the book, but first up I thought I would try my hand at baking some biscuit blondies, as they sounded incredible and who's gonna stop me having dessert first?

The original recipe contains butterscotch chips and Pecans but I decided to change that up and used mini fudge pieces and one of those delectable maltesers bars chopped up instead and OMG it is incredible, and so easy, although does require some patience, which is not my virtue but trust me these are worth the wait.

First up you will need;

For the base

500g malted milk biscuits, crushed.
200g unsalted butter melted.

For the Blondie top

225g unsalted butter softened
225g caster sugar
4 medium eggs
150g plain flour
(I used )100g mini fudge pieces
(I used) 1 100g bar Malteser chopped


  1. Preheat the oven to 190C/170C fan/Gas5. Line a rectangular cake tin with baking paper. (I picked mine up from Tesco for £4)
  2. Crush your biscuits and put in a bowl with the melted butter and mix until there is no more dry biscuit.
  3. Put the mixture in your tin and squash the biscuit down with the palm of your hands, until it's all pushed down and compact in the tin.
  4. Bake in the oven for 20 minutes, then remove and allow to cool slightly while you make the blondie top.
  5. Put the butter, sugar, eggs flour, chocolate and fudge pieces in a bowl and mix for a couple of minutes until well combined.
  6. Pour the mixture onto the biscuit base and bake for a further 30 minutes, then take out and allow to cool in the tin for another 30 minutes, before removing and cutting into portions.
Straight out the oven

See I told you it was easy, just requires a little patience. These blondies are delicious and the biscuit base just gives them a whole new dimension.
