Vegan baking is somewhat of new territory to me, but any self respecting cake eater, whether she finds herself going dairy free or not, needs cake. I have tried a few vegan cakes while being out about, and decided I needed to find a recipe I could bake myself.
That's when I decided to research a carrot cake recipe, and came up with this recipe for vegan carrot cake with lemon buttercream.
Vegan carrot cake with lemon buttercream recipe
This is a super simple, all in one recipe, that even a pretty novice baker, should be able to manage.
Ingredients
- 2 cups (250g) plain flour
- 1tsp Baking powder
- 1tsp Baking soda
- 1/2tsp Salt
- 2tsp Cinnamon
- 1tsp Nutmeg
- 250g Grated carrot (approx 3)
- 1 and 1/2 cup brown sugar (300g)
- 2 flax eggs
- 1tsp Vanilla extract
- 1tbsp Apple cider vinegar
Buttercream
- 3 and 1/2 cups icing sugar (450g)
- 3tbsp vegan butter
- 1tsp Vanilla extract
- 2tsp Apple cider vinegar
- 3 to 4 tbsp fresh lemon juice (1 lemon)
Directions
- Preheat the oven to 180 celsius or 350 degrees, line 2 round 7 Inch cake tins with parchment paper.
- Sift the flour, baking powder, baking soda, salt, cinnamon and nutmeg into a mixing bowl.
- Add the grated carrot and brown sugar and mix.
- Prepare the flax eggs, by mixing 2tbsp flaxseed with 6 tbsp water and allow it to rest for a minute or so.
- While waiting for the flax egg to stand, add the oil, vanilla, and the apple vinegar to the bowl.
- Then add the flax and mix everything together till well combined, if the mixture is a little dry add a drop of dairy free milk.
- Tip into the cake tins and pop in the oven, bake for approximately 30 minutes, until a cocktail stick comes out clean when pricked.
- Put on a cooling rack and allow to cool completely.
- Once cool, make the buttercream by combining all the ingredients and mixing with an electric mixer.
- Cover one of the cakes with buttercream, top with the other cake and cover with the remaining cream.
