I haven't written a foodie post in a while, but when I came up with this recipe recently for VEGAN Broccoli and Cheese soup, I thought it my duty to share!
When you have as many things as me you can not eat, due to various health conditions it can be hard to find prepared convenience foods in supermarkets especially soups. Due to the restrictions on my diet my meals can sometimes get bland, so I got my thinking cap on. I had always enjoyed broccoli and cheese soup, so why not make my own recipe, free from the foods that do not agree with me.That's when I came up with this soup, not only is it tasty, its healthy quick to whip up and doesn't cost a bomb to boot.
Vegan Broccoli and Cheese soup recipe
Ingredients;
Serves 6
1 small onion chopped
4 regular potatoes peeled and chopped
1 head of broccoli
1 litre of veg stock
1 250ml carton dairy free cream (Oatly)
175 gram of grated dairy free cheese (Violife)
2 tbs olive oil
1 tsp yeast flakes
salt and pepper to taste
Method;
- Heat the olive oil in a large saucepan and cook onion until soft.
- Add the chopped potato to the pan stir then add stock and bring to the boil.
- Add broccoli florets and turn down to a simmer, continue to simmer for approx 20 minutes or until veg is soft.
- Pour into your blender and blend until smooth, alternatively use a stick blender.
- Return to heat and add the cream, stir then add the yeast flakes and cheese and continue to stir for around 5 minutes until the soup is warmed through and creamy.
- Season as desired, and serve or transfer to containers for the fridge or freezer.
Vegan broccoli and cheese soup is great served with bread and "butter", a crusty roll or even a couple of slices of garlic bread if you are feeling fancy!
